Vegan Brownie Skewers with Fresh Fruit and Marshmallows

Ingredients

  • 2 bananas
  • 1/2 cup nut butter
  • 1/2 cup almond flour
  • 1/2 cup avocado
  • 1/4 cup maple syrup
  • 1/4 cup cocoa powder
  • 1 tbsp vegan protein powder (optional)
  • 1 tsp baking powder

Skewer components

  • 10-12 skewers
  • 1 cup strawberries
  • 1 cup blueberries
  • 1 cup marshmallows

Preparation

  1. Mash the bananas in a bowl.

  2. Add nut butter, almond flour, avocado, maple syrup, cocoa powder, vegan protein powder, and baking powder, then mix well.

  3. Line a brownie pan with parchment paper.

  4. Bake for 45-48 minutes at 350F.

  5. Let cool completely. For less fudgy texture, refrigerate for an hour to harden.

  6. Cut the brownies into small squares.

  7. Cut the tops off the strawberries.

  8. Assemble skewers by layering strawberry, marshmallow, blueberries, brownie, and repeat in opposite order.

  9. Use vegan marshmallows to keep the recipe vegan.
