Vegan Brownie Fruit Skewers

Ingredients

Brownie

  • 2 bananas
  • 1/2 cup nut butter (I used @justins cashew butter)
  • 1/2 cup almond flour
  • 1/2 cup avocado (I used frozen avocado and thawed it)
  • 1/4 cup maple syrup
  • 1/4 cup cocoa powder
  • 1 tbsp vegan protein powder (I used @ritual. Code 10Peyton for a discount!)
  • 1 tsp baking powder

Skewer

  • 10-12 skewers
  • 1 cup strawberries
  • 1 cup blueberries
  • 1 cup marshmallows (I used @mydandies)

Preparation

  1. Mash the bananas in a bowl.

  2. Add everything else and mix well.

  3. Line a brownie pan with parchment paper.

  4. Bake for 45-48 minutes at 350°F.

  5. Let cool completely.

  6. Cut into small squares.

  7. Cut the tops off the strawberries.

  8. Assemble skewers with strawberry, marshmallow, blueberries, and brownie, repeating in reverse order.

Tips

  1. Use vegan marshmallows to keep the recipe vegan.

  2. Refrigerate brownies for an hour if you want them less fudgy and harder.
