Vegan Chocolate Banana Muffins with No Refined Sugar

Ingredients

  • 2 bananas
  • 60ml agave or maple syrup
  • 260g self-raising flour
  • 1 and 1/2 tsp baking powder
  • 20g cacao powder or cocoa powder
  • 1 tsp vanilla extract
  • 180ml plant milk (I used soya)
  • 100g dark chocolate
  • 1/2 tsp apple cider vinegar

Preparation

  1. Chop the bananas up, add to a mixing bowl and then mash.

  2. Add the syrup and mix in with the banana.

  3. Melt 50g of the chocolate and add to the mixing bowl.

  4. Add the flour, baking powder, vanilla extract, cacao powder, plant milk to the bowl and mix in.

  5. Chop the remaining chocolate into chunks and add to the bowl along with the apple cider vinegar.

  6. Scoop the mixture into paper cases or baking paper chopped into squares.

  7. Pop in the oven at 180 degrees for 20-22 minutes or until a skewer comes out clean.
