Gold Chocolate Vegan Muffins
Ingredients
- 75g self-raising flour (gluten-free)
- 1 tsp baking powder
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tbsp cocoa powder
- 1 tbsp natural sweetener
- 1 tbsp butter
- 100ml milk
- Choc Shot or dark chocolate (for topping)
- Edible gold powder
- Icing sugar (for drizzle)
Preparation
Mix butter and sweetener into a bowl until smooth.
Add all other ingredients and mix until smooth.
Line a muffin tray with 6 paper cases.
Pour in mixture.
Bake in the oven at 180 degrees Celsius or 350 degrees Fahrenheit or gas mark 4 for 20 minutes.
Once cool, lift off muffin top and add a squirt of Choc Shot or a square of dark chocolate, then replace lid.
Dust over edible gold powder and drizzle with icing sugar mixed with water.
