Gold Chocolate Vegan Muffins

Ingredients

  • 75g self-raising flour (gluten-free)
  • 1 tsp baking powder
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 1 tbsp natural sweetener
  • 1 tbsp butter
  • 100ml milk
  • Choc Shot or dark chocolate (for topping)
  • Edible gold powder
  • Icing sugar (for drizzle)

Preparation

  1. Mix butter and sweetener into a bowl until smooth.

  2. Add all other ingredients and mix until smooth.

  3. Line a muffin tray with 6 paper cases.

  4. Pour in mixture.

  5. Bake in the oven at 180 degrees Celsius or 350 degrees Fahrenheit or gas mark 4 for 20 minutes.

  6. Once cool, lift off muffin top and add a squirt of Choc Shot or a square of dark chocolate, then replace lid.

  7. Dust over edible gold powder and drizzle with icing sugar mixed with water.
