Blueberry Doughnuts with Banana and Maple Syrup

Ingredients

  • 1 punnet blueberries
  • 1/2 cup gluten free flour
  • 1/2 cup oat flour
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 large firm banana
  • 1/2 cup plant milk
  • 1/4 cup maple syrup
  • 2 tsp apple cider vinegar
  • 1 tbsp melted coconut oil
  • 1 tsp vanilla

Preparation

  1. Preheat oven to 180°C

  2. Mash your banana and set aside

  3. Mix your dry ingredients

  4. In a separate bowl mix in your milk, syrup, apple cider vinegar, coconut oil and vanilla. Mix in your mashed banana

  5. Combine your wet and dry mixtures and fold in the blueberries.

  6. Spray or grease your donut pan with a small amount of coconut oil or they will stick. Spoon mixture into the holes and bake for 12-14 mins or until golden

  7. Leave to cool a little before removing from the pan and enjoy best eaten fresh and/or with a spread of peanut butter
