Blueberry Coconut Panna Cotta with Banana Nicecream

Ingredients

Panna cotta layer

  • 6 oz can full fat coconut milk
  • 2 tsp vanilla extract
  • 1-2 teaspoons agave (depending on desired sweetness)

Blueberry jam

  • 1 1/2 cup blueberries
  • 4 tablespoons water
  • 3 tablespoons chia seeds
  • agave (to taste)
  • squeeze of lemon juice

Banana nicecream

  • Bananas (frozen)

Preparation

  1. Whip the panna cotta ingredients together.

  2. Pour the mixture into four small glasses and place in the freezer for about ten minutes to set.

  3. In the meantime, make the blueberry jam layer by microwaving blueberries with water in 30-second increments until they soften and can be mashed with a fork, then add the remaining blueberry jam ingredients and mix until blended.

  4. Remove the panna cotta from the freezer, gently place the blueberry jam on top, and return to the freezer for another 10 minutes to set.

  5. Prepare banana nicecream by blending frozen bananas until smooth and creamy

  6. Top it off with the banana nicecream and serve immediately.
