Blueberry, Lemon & Chia Mini Pies

Ingredients

For the Crust

  • 100 g fine oats, blended (or oat flour)
  • 10 g shredded coconut
  • 20 g coconut oil, melted
  • Peel of 1/2 a lemon, shredded
  • 10 g mesquite powder or other sweetener
  • 20 g lemon juice
  • 10 g chia seeds (soaked in 30 g hot water for 5 minutes)

For the Filling

  • 200 g bananas
  • 50 g blueberries
  • 20 g coconut mylk powder + 70 g cold water (or 70 g plant milk)
  • 15 g lemon juice
  • 20 g chia seeds

Preparation

  1. Mix well all of the ingredients for the crust.

  2. Place 6 silicone molds in a muffin tray and press the crust dough into them, forming little cups. You can divide the dough equally using a kitchen scale.

  3. For the filling, blend together bananas, blueberries, coconut mylk powder mixture, lemon juice, and chia seeds.

  4. Pour the filling mixture into the prepared mini pie crusts.

  5. Decorate the pies with additional blueberries, lemon peel, and shredded coconut.

  6. Chill the mini pies in the fridge until set.
