Chia Seed Jam
Ingredients
- 1 cup of strawberries, chopped (substitute for any berry of your choice)
- 1 tbsp chia seeds
- 1/2 tbsp lemon juice
- 1 tbsp maple syrup or honey (if not vegan) - only if required
Preparation
Heat the fruit in a pan on a medium heat
Stir to stop it catching and when softened, mash with a potato masher
How much you mash will determine how smooth the jam is
Add in the chia seeds, lemon juice and maple syrup/honey if it needs sweetening and stir together
Take the pan off the heat and let cool
The mixture will thicken as it cools
Store in a sterile airtight jar in the fridge for up to 1 week
