Chia Seed Jam

Ingredients

  • 1 cup of strawberries, chopped (substitute for any berry of your choice)
  • 1 tbsp chia seeds
  • 1/2 tbsp lemon juice
  • 1 tbsp maple syrup or honey (if not vegan) - only if required

Preparation

  1. Heat the fruit in a pan on a medium heat

  2. Stir to stop it catching and when softened, mash with a potato masher

  3. How much you mash will determine how smooth the jam is

  4. Add in the chia seeds, lemon juice and maple syrup/honey if it needs sweetening and stir together

  5. Take the pan off the heat and let cool

  6. The mixture will thicken as it cools

  7. Store in a sterile airtight jar in the fridge for up to 1 week

  8. Enjoy! x
