Buckwheat Banana Bread

Ingredients

  • 2/3 of a banana (mashed)
  • 1/3 cup buckwheat flour
  • 1/3 cup plant milk
  • 1/2 tsp baking powder
  • pinch of sea salt
  • splash of vanilla
  • a few shakes of pumpkin pie spice (or cinnamon)

Preparation

  1. Combine 2/3 of a banana (mashed), 1/3 cup buckwheat flour, 1/3 cup plant milk, 1/2 tsp baking powder, pinch of sea salt, splash of vanilla, a few shakes of pumpkin pie spice (or cinnamon)

  2. Stir until fully mixed, then transfer the batter to your baking dish, slice the remainder of the banana, and place the slices on top

  3. Bake at 350F for ~25-30 mins

  4. Enjoy
