Cashew Butter Cookies

Ingredients

  • 1 cup coconut blossom sugar
  • 1 large egg
  • 1 cup cashew butter

Preparation

  1. Preheat oven to 180 deg c and line a baking sheet with parchment paper

  2. In a large bowl mix together all of the ingredients until well combined

  3. Form the dough into balls and place on baking sheet

  4. I find keeping my hands wet stops the stickiness

  5. Flatten the dough balls slightly with a fork in a cross cross pattern and bake 10-12 minutes, until the edges are slightly golden brown

  6. Cool for 5 minutes

  7. I sometime add a bit of vanilla essence and sprinkle with maldon’s sea salt before baking
