Cashew Butter Cookies
Ingredients
- 1 cup coconut blossom sugar
- 1 large egg
- 1 cup cashew butter
Preparation
Preheat oven to 180 deg c and line a baking sheet with parchment paper
In a large bowl mix together all of the ingredients until well combined
Form the dough into balls and place on baking sheet
I find keeping my hands wet stops the stickiness
Flatten the dough balls slightly with a fork in a cross cross pattern and bake 10-12 minutes, until the edges are slightly golden brown
Cool for 5 minutes
I sometime add a bit of vanilla essence and sprinkle with maldon’s sea salt before baking
