Delicious Healthy Chocolate Hazelnut Muffins

Ingredients

  • 50g apple puree
  • 25g hazelnut butter or similar
  • 180ml plant milk
  • 1 tsp apple cider vinegar
  • 80g coconut blossom sugar, xylitol, or sugar
  • 80g ground hazelnuts
  • 50g wholemeal spelt flour or wheat flour
  • 50g regular spelt flour or wheat flour
  • 1/3 tsp baking soda
  • 1.5 tsp baking powder
  • 30g cacao powder
  • Optional: chocolate chunks for inside
  • Optional: chocolate chunks or chips for top

Preparation

  1. Preheat the oven to 180°C/350°F with upper and lower heat.

  2. Mix all ingredients together.

  3. If desired, add chocolate chunks to the center of some muffins.

  4. Pour the dough into muffin forms, preferably silicone ones.

  5. Bake for approximately 25 minutes.

  6. Let the muffins cool down.

  7. Top with melted chocolate or chocolate nut spread and roasted hazelnuts.

Tips

  1. For a sugar-free version, omit the coconut blossom sugar.

  2. For gluten-free option, use a gluten-free flour mix or rice flour with 1 flax egg.
