Taco Pancakes with Soy Skyr and Strawberries

Ingredients

  • ~70g ripe, mashed banana
  • 1 tsp apple cider vinegar
  • one pinch of salt
  • 150ml plant milk
  • 1tbsp ground flaxseed or chia seeds
  • 100g wholemeal spelt flour (or other)
  • 10g vegan protein powder (optional, if you leave it out use more flour/less plant milk)
  • 1tsp baking powder
  • 1/3 tsp baking soda

Preparation

  1. Mix all ingredients together.

  2. Spread the dough in a well-coated pan.

  3. Bake the pancakes on both sides; use 1 tablespoon of dough per pancake.

  4. Serve with toppings of your choice.

  5. Note: It is easier to eat them with a fork and knife.
