Healthy Vegan Apple Pancakes

Ingredients

  • 50g grounded oats (gf if needed)
  • 40g rice/buckwheat flour (wheat/spelt flour works too)
  • 1/2 ripe banana, mashed
  • 1 tsp apple cider vinegar (optional, together with the baking soda)
  • 100 ml plant milk
  • 1/3 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 apple, chopped in small pieces

Preparation

  1. Mix all ingredients, bake ~6 small pancakes in a well coated pan with a tiny bit of oil

  2. Toppings: when you're done with the pancakes, quickly cut the apple, mix it with 1 tsp coconut blossum sugar, 1/2 tsp cinnamon and and fry it with 1 tsp of oil

  3. Sauce: Mix 1 tbsp cashew butter, 1 tbsp maple syrup and a little bit of water (~1-2 tbsp, depending on the consistency you like)
