Easy Vegan Cinnamon Rolls

Ingredients

  • 3 tbsp Vegan Butter, melted
  • 1 tbsp Coconut Sugar
  • 2 1/2 cups Flour
  • 1 cup Coconut Milk
  • 1/2 Vanilla Bean
  • 1 packet Instant Yeast

Filling

  • 2 tbsp Coconut Sugar
  • 2 tbsp Vegan Butter
  • 1 tsp Ground Cinnamon

Preparation

  1. Warm the butter and coconut milk, then when it is warm (not hot), add yeast and let sit for 10 minutes.

  2. Mix together, then add coconut sugar, vanilla, and sift flour into it 1/2 cup at a time.

  3. When the dough starts to form, knead it.

  4. Let it rise in an oiled bowl for 45 minutes to 1 hour.

  5. Roll the dough until it is thin.

  6. Brush the filling on the whole thing and roll it up.

  7. Cut it using floss or another method to avoid smashing.

  8. Optionally, add an extra buttery brushed layer before baking.

  9. Bake at 350°F for 25 minutes until golden brown.
