Giant Oatmeal Raisin Breakfast Cookies
Ingredients
- 3/4 cup whole wheat flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 flax egg (1tbsp flaxseed meal + water)
- 3/4 cup coconut sugar
- 1/2 cup melted coconut oil
- 1 tsp vanilla
- 1.5 cup rolled oats
- 1/2 cup chocolate chips
- 1/2 cup raisins
Preparation
Preheat your oven to 350F. In a large bowl, mix your flour, baking soda, and salt.
In a separate bowl. Mix your flax egg together with coconut sugar, coconut oil, and vanilla.
Combine your wet and dry ingredients, and steadily stir until well mixed. Once combined, fold in your oats, chocolate chips, and raisins.
our your mixture into a non-stick or lightly greased skillet, and bake for 18-20 minutes.
