Simple Key Lime Pie
Ingredients
Crust
- 1 1/2 cup graham cracker crumbs (make it GF & use gf graham crackers)
- 1/4 cup confectioners sugar
- 5 1/2-6 tbsp melted butter
- pinch of salt
Filling
- zest of one lime (approximately 1 tbsp)
- 3 egg yolks
- 14 ounce can sweetened condensed milk
- 2/3 cup lime or key lime juice
Toppings
- key limes (for topping)
- confectioners sugar (for topping)
- whipped cream
Preparation
Preheat oven to 325 degrees.
Mix the crust ingredients together.
Spray a 9-inch pie pan and press the crust into it evenly.
Bake for 15 minutes.
Let the crust cool.
Whisk lime zest and egg yolks on high for 4 minutes until it becomes a hollandaise-type consistency.
Add sweetened condensed milk and beat for three minutes on high.
Add lime juice.
Pour the filling into the crust.
Bake for 25 minutes until set.
Cool to room temperature.
Store in the fridge until serving.
Top with cut key limes, confectioners sugar, and whipped cream.
