Creamy Avocado Truffle Linguini

Ingredients

  • 2 cups basil
  • Handful baby spinach
  • 1/4 cup hemp seeds
  • 1/3 cup olive oil
  • 1/4 an avocado
  • 1/2 tablespoon truffle oil
  • Plant-based linguini
  • A couple handfuls of baby spinach
  • Nutritional yeast
  • Salt and pepper

Preparation

  1. Put all the sauce ingredients in a blender and blend at high speed.

  2. Cook the plant-based linguini according to the directions on the package

  3. Cook the baby spinach in another pan with water.

  4. Strain the pasta.

  5. Add a couple spoonfuls of sauce, baby spinach, nutritional yeast, salt and pepper to the pasta and mix.
