Creamy Avocado Truffle Linguini
Ingredients
- 2 cups basil
- Handful baby spinach
- 1/4 cup hemp seeds
- 1/3 cup olive oil
- 1/4 an avocado
- 1/2 tablespoon truffle oil
- Plant-based linguini
- A couple handfuls of baby spinach
- Nutritional yeast
- Salt and pepper
Preparation
Put all the sauce ingredients in a blender and blend at high speed.
Cook the plant-based linguini according to the directions on the package
Cook the baby spinach in another pan with water.
Strain the pasta.
Add a couple spoonfuls of sauce, baby spinach, nutritional yeast, salt and pepper to the pasta and mix.
