Creamy Hummus Pasta for Two
Ingredients
- 2 servings of pasta of choice
- 2-3 tablespoons hummus
- juice of 1/2 lemon
- salt and pepper to taste
Optional additions
- nutritional yeast
- sliced cherry tomatoes
- any vegetables such as broccoli
Preparation
Cook the pasta according to packet instructions.
Drain the pasta through a colander, then pour it back into the pan.
Add 2-3 tablespoons of hummus, juice of half a lemon, salt and pepper, and optionally nutritional yeast, then gently stir everything together.
Stir in some sliced cherry tomatoes or any desired vegetables, such as broccoli.
Serve and enjoy!
