Creamy Hummus Pasta for Two

Ingredients

  • 2 servings of pasta of choice
  • 2-3 tablespoons hummus
  • juice of 1/2 lemon
  • salt and pepper to taste

Optional additions

  • nutritional yeast
  • sliced cherry tomatoes
  • any vegetables such as broccoli

Preparation

  1. Cook the pasta according to packet instructions.

  2. Drain the pasta through a colander, then pour it back into the pan.

  3. Add 2-3 tablespoons of hummus, juice of half a lemon, salt and pepper, and optionally nutritional yeast, then gently stir everything together.

  4. Stir in some sliced cherry tomatoes or any desired vegetables, such as broccoli.

  5. Serve and enjoy!
