Easy Creamy Hummus Pasta for Two

Ingredients

  • 2 servings pasta of choice
  • 2-3 tablespoons hummus
  • juice of 1/2 lemon
  • salt and pepper to taste

Optional add-ins

  • nutritional yeast
  • sliced cherry tomatoes or other vegetables (such as broccoli)

Preparation

  1. Cook the pasta according to packet instructions

  2. Drain the pasta through a colander then pour the pasta back into the pan

  3. Add 2-3 tablespoons hummus juice of 1/2 lemon salt and pepper and nutritional yeast if desired then gently stir everything together

  4. Stir in sliced cherry tomatoes or other vegetables such as broccoli

  5. Serve and enjoy
