Creamy Tomato Cashew Rigatoni

Ingredients

  • 1 tsp avocado oil⁠
  • 1/2 of an onion⁠
  • 3 minced garlic cloves⁠
  • 2 cups cherry tomatoes⁠
  • 1 tsp salt⁠
  • 2/3 cup raw cashews⁠
  • 1/3 cup water⁠
  • 1/2 cup fresh basil, chopped⁠
  • 2 cups cooked rigatoni⁠

Preparation

  1. In a medium pot, cook the onion in the avocado oil (or other oil with a high smoke point) for 5 minutes

  2. Add the garlic and cook an additional minute

  3. Add the tomatoes and salt, and cook for 5 minutes

  4. Move to the blender, add the cashews and water, and blend until smooth

  5. Return to the pot and add the basil

  6. Cook for a minute, then serve with the rigatoni

  7. Top with nooch and enjoy!⁠
