Dezi's Fast and Creamy Carbonara

Ingredients

  • 4 rashers bacon
  • 1.5 cups Parmesan cheese
  • 3 eggs
  • 1 pack spaghetti

Toppings

  • Extra Parmesan cheese
  • Cracked black pepper

Preparation

  1. Boil spaghetti in salted boiling water as per pack instructions

  2. Cube bacon and pan fry in a drizzle of olive oil

  3. In a large shallow bowl add 2 whole eggs, 1 egg yolk, Parmesan cheese, some cracked black pepper and whisk together to combine

  4. Slowly add 2 ladles of starchy pasta water while whisking the egg and cheese mixture at the same time so it does not curdle

  5. Add pasta and toss through along with the bacon pieces

  6. Top with extra Parmesan cheese and serve immediately

Tips

  1. Mix eggs and Parmesan cheese to form a thick paste, then add some starchy water for an authentic carbonara cream

  2. Toss everything together and finish with more Parmesan for a comforting meal
