Spaghetti with Turkey Meatballs

Ingredients

Meatballs

  • 600-800g protein of choice (e.g., turkey)
  • 200-300g sofrito of onion, carrot, and garlic
  • A handful of chopped fresh parsley
  • 3 tablespoons ricotta
  • 4-6 tablespoons panko or breadcrumbs
  • 3-4 eggs
  • Salt and pepper to taste

Sauce

  • Olive oil
  • 2-3 onions
  • 2-3 carrots
  • 3-5 garlic cloves
  • 2 jars natural tomato sauce
  • 3 tablespoons oregano

Pasta

  • Spaghetti (amount as needed)

Preparation

  1. Mix all the meatball ingredients together and form into balls, then cook until browned and cooked through

  2. Heat olive oil in a pan and sauté 2 to 3 onions along with an equal amount of carrots and 3 to 5 garlic cloves until softened

  3. Add 2 jars of natural tomato sauce and 3 tablespoons of oregano to the sauce and simmer until heated through

  4. Cook spaghetti according to package directions

  5. Serve the spaghetti topped with meatballs and sauce
