Spaghetti with Turkey Meatballs
Ingredients
Meatballs
- 600-800g protein of choice (e.g., turkey)
- 200-300g sofrito of onion, carrot, and garlic
- A handful of chopped fresh parsley
- 3 tablespoons ricotta
- 4-6 tablespoons panko or breadcrumbs
- 3-4 eggs
- Salt and pepper to taste
Sauce
- Olive oil
- 2-3 onions
- 2-3 carrots
- 3-5 garlic cloves
- 2 jars natural tomato sauce
- 3 tablespoons oregano
Pasta
- Spaghetti (amount as needed)
Preparation
Mix all the meatball ingredients together and form into balls, then cook until browned and cooked through
Heat olive oil in a pan and sauté 2 to 3 onions along with an equal amount of carrots and 3 to 5 garlic cloves until softened
Add 2 jars of natural tomato sauce and 3 tablespoons of oregano to the sauce and simmer until heated through
Cook spaghetti according to package directions
Serve the spaghetti topped with meatballs and sauce
