Easy Homemade Pasta Alla Vodka
Ingredients
- 1/2 medium onion finely chopped
- 1 tbsp butter
- 2 garlic cloves minced
- 6 oz tomato paste
- 3 tbsp vodka (or leave out)
- 1 cup heavy cream or I used whole milk
- 1/2 parmesan cheese (divided)
- 1 lb pasta
- 1/2 cup reserved pasta water
For serving
- chili flakes
- fresh basil
- more Parmesan
Preparation
Chop the onion and garlic.
Bring a large pot of water to a boil and cook the noodles 1 minute less than package instructions, and save some pasta water before draining.
Add olive oil and butter to a large skillet; once the butter starts to melt, add the onion and cook for 3 minutes.
Add the garlic and cook for one more minute, stirring.
Add the tomato paste and stir, letting it come to a dark brown color.
Add vodka if using and let it sizzle; once it’s evaporated, add milk and cheese.
Stir until a smooth sauce is formed.
Add the cooked noodles, pasta water, and more cheese.
Stir until well coated.
Serve with chili flakes and fresh basil.
Tips
Vodka can be omitted as it cooks off completely.
This dish is easy, delicious, comforting, and budget-friendly.
