Hearty Vegan Jackfruit Stew
Ingredients
- 2 cups young Jackfruit pieces
- 5 potatoes
- 1 onion
- 2 garlic cloves
- 1 carrot
- 4 cups veggie stock
- handful cherry tomatoes
- 1/2 teaspoon chilli
- 2 tablespoons smoked paprika
- 2 bay leaves
- 2 tablespoons thyme
- 2 teaspoons oregano
- Salt, pepper
- 1 tablespoon flaxseed meal mixed with 3 tablespoons water
- 4 tablespoons chopped parsley
- olive oil
Preparation
Chop the carrot, onion, potatoes and garlic
Glaze the onion in oil
Deglaze with one cup of broth water
Add the carrot and garlic
Stir in the spices, bay, salt and pepper
Add the jackfruit
Pour in the rest of the veggie stock
Cook for 35 minutes
Add the potatoes, tomatoes and flax meal
Add more water if needed
Cook for another 20 minutes
Take out the bay
Stir in the parsley and keep some for decoration
Take from the stove and let it sit for a couple more minutes
Serve with fresh pepper, bread and parsley
