Homemade Hummus, Baked Falafel & Skillet Flatbreads

Ingredients

  • 1/4 cup tahini (half what recipe calls for)
  • lemon juice + smoked paprika
  • ton of greens
  • 1 can chickpeas
  • garlic
  • touch of tahini
  • lemon juice
  • cumin & 4 tbsp whole wheat flour
  • 1 cup dark rye flour + 2 cups whole wheat flour
  • splash of olive brine
  • tahini drizzle

Preparation

  1. Hummus made using @minimalistbaker recipe for EASY Microwave Hummus— my GO TO recipe now for the best hummus (I stopped purchasing store bought bc of this!)

  2. My substitutions: 1/4 cup tahini (half what recipe calls for), added more lemon juice + smoked paprika

  3. Better-Than-Restaurant Falafel by @minimalistbaker queen Dana AGAIN killin it with another perfect recipe!!! threw in a food processor: ton of greens (I used 2 cups spinach + handful chopped parsley), 1 can chickpeas, garlic, touch of tahini, lemon juice, cumin & 4 tbsp whole wheat flour

  4. Shaped the dough into 14 flattened falafel balls. baked (vs fried) on a silicone baking mat at 375°F for 25 mins, flip then baked another 25 mins. out came these beauties perfectly crispy on outside & full of flavor ?

  5. Skilled Flatbreads by @kingarthurbaking •my subs: 1 cup dark rye flour + 2 cups whole wheat flour (prolly why these didn’t turn out like in the photos), then divided the rested dough into 10 balls, rolling each into a thin round palm-sized piece. fried them on each side 2 mins to make these tiny bb wraps! had some bubbling from the baking soda, a great whole wheat flavor, dense thick texture but flexible for wraps! ?

  6. On each flatbread a NIIIIICE schmear of hummus, a couple falafels to top, dollop of israeli-inspired salad (finely diced cucumber ? tomato ? kalamata olives ? & parsley ? dressed in a splash of olive brine) plus a tahini drizzle
