Pan-Fried Zucchini Pizza
Ingredients
- 1 zucchini
- 1/2 cup chickpea flour
- 1/3 cup water
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 tablespoon avocado oil (for frying)
Toppings
- Toppings of your choice
Preparation
Grate zucchini and add it to a bowl with chickpea flour, water, and seasonings. Mix to combine and let the mixture sit for 10-15 minutes to thicken. Add more flour if needed.
Heat oil in a frying pan over medium heat. Add zucchini mixture and spread it out into a circle. Fry on low heat, covered with a lid, for 7 minutes or until the bottom is crispy brown. Flip and add the toppings.
Cook for another 5 to 7 minutes on low heat. Serve warm and enjoy right away.
