Roasted Red Pepper Pasta Sauce
Ingredients
- 4 red bell peppers
- 1 teaspoon olive oil
- 5 cloves garlic peeled
- 1 large shallot chopped
- 1/4 cup cashews
- basil leaves, handful
- 1 pound your fave pasta
- 1/2 cup vegetable broth
- 2 tablespoons lemon juice
Preparation
Roast the red bell peppers until charred and softened
Heat olive oil in a pan and sauté garlic and shallot until fragrant
Add cashews, basil leaves, vegetable broth, and lemon juice to the pan
Blend all ingredients together with the roasted peppers to make a smooth sauce
Cook pasta according to package instructions
Toss the cooked pasta with the sauce and serve
