Roasted Red Pepper Pasta Sauce

Ingredients

  • 4 red bell peppers
  • 1 teaspoon olive oil
  • 5 cloves garlic peeled
  • 1 large shallot chopped
  • 1/4 cup cashews
  • basil leaves, handful
  • 1 pound your fave pasta
  • 1/2 cup vegetable broth
  • 2 tablespoons lemon juice

Preparation

  1. Roast the red bell peppers until charred and softened

  2. Heat olive oil in a pan and sauté garlic and shallot until fragrant

  3. Add cashews, basil leaves, vegetable broth, and lemon juice to the pan

  4. Blend all ingredients together with the roasted peppers to make a smooth sauce

  5. Cook pasta according to package instructions

  6. Toss the cooked pasta with the sauce and serve
