Vegan Creamy Garlic Spinach Pasta
Ingredients
- 1 potato (peeled)
- 1/3 cup onion (cut into large chunks)
- 1.5 cups water
- 2 tablespoons cooking water
- 1 cup full-fat coconut milk
- 1 clove garlic
- 1 tablespoon tahini
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
- cooked pasta
- some spinach
- optional tomatoes
- optional hemp seeds
Preparation
Boil 1 potato (peeled) and 1/3 cup onion (cut into large chunks) in 1.5 cups water and cook for about 15 minutes until soft.
Blend the cooked vegetables with 2 tablespoons of the cooking water, 1 cup full-fat coconut milk, 1 clove garlic, 1 tablespoon tahini, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon paprika.
Add the blended mixture to a pan and heat to medium heat.
Toss with cooked pasta and some spinach.
Optionally, add tomatoes and hemp seeds.
