Vegan White Sauce Spaghetti with Spinach Mushrooms

Ingredients

  • 1 red onion - sliced
  • 4 cloves garlic - finely chopped
  • 250gms baby spinach leaves
  • 150gms sundried tomatoes
  • 250gms shiitake mushrooms
  • 200gms wholewheat spaghetti
  • 200mls @oatly creme fraiche
  • 1 tablespoon olive oil
  • Salt & pepper to taste
  • Chilli flakes to taste

Preparation

  1. Cook spaghetti in boiling water and while that's cooking make the sauce

  2. Fry the onion in the oil until soft

  3. Add the garlic and stir for 1 minute

  4. Slice the mushrooms and add, cook for 1 minute until soft

  5. Stir in the sun dried tomatoes and spinach and allow it to wilt on a medium heat

  6. Season to taste with salt and pepper

  7. Stir in the creme fraiche when the spaghetti is ready

  8. Drain the spaghetti and add to the sauce mix

  9. Stir, serve and enjoy right away
