Lentil Bolognese with Wholewheat Spaghetti
Ingredients
- 1 red onion
- 2 tablespoons olive oil
- 4 cloves garlic
- 1 tin chopped tomatoes
- 2 tins lentils
- 1 teaspoon dried mixed herbs
- 1 teaspoon red chilli flakes (optional)
- Salt to taste
- Fresh basil (optional)
- 400g wholewheat spaghetti
Preparation
Fry the red onion in olive oil until soft and translucent, then add garlic and cook for another minute.
Add lentils and tomatoes and stir well.
Add herbs and salt to taste, then simmer for 10-15 minutes to thicken the sauce.
If the mixture gets too dry, add a little water to achieve desired consistency.
Serve with spaghetti.
