15 Minute Italian Chopped Salad
Ingredients
- 2 large heads romaine lettuce
- 1/2 cup chopped red onion
- 1/2 cup sliced pepperoncini rings
- 1/2 lb. provolone, chopped
- 1/2 lb. salami, chopped
- 1 lb. cherry tomatoes, chopped
Italian dressing
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 2 tbsp lemon juice
- 2 tbsp oregano
- 1 tbsp Dijon mustard
- 2 tsp garlic powder
- 1salt
- 1/4 tsp. freshly ground black pepper
Preparation
Combine all of the salad ingredients in a large bowl
Toss
In a small bowl or blender, mix the Italian dressing ingredients well
Pour over the salad and toss again
Serve and enjoy
Tips
For meal prep, leave the dressing off and add right before you eat
