Buffalo Cauliflower Lentil Tacos

Ingredients

  • Cauliflower florets
  • Buffalo sauce (Primal Kitchen)
  • Canned lentils
  • Corn tortillas (Siete Foods)
  • Avocado
  • Mexican cheese blend
  • Jalapeño sauce (Trader Joe's)
  • Romaine lettuce

Preparation

  1. Slather cauliflower florets in Buffalo sauce and roast at 425 degrees for 30-35 minutes.

  2. Toss the roasted cauliflower with a little extra Buffalo sauce.

  3. Drain and rinse canned lentils if necessary

  4. Warm tortillas if desired

  5. Assemble tacos by filling tortillas with lentils and buffalo cauliflower, then top with avocado, Mexican cheese blend, jalapeño sauce, and romaine lettuce
