Chargrilled Cajun Chicken Salad

Ingredients

  • Cajun mini fillets (Squeaky Bean)
  • Houmous
  • Roasted aubergine with garlic sea salt
  • Avocado
  • Vine ripened tomatoes
  • Green pepper
  • Cucumber
  • Red onion
  • Roasted vegetable couscous
  • Wholegrain pitas
  • Stuffed olives
  • Avocado and lemon oil
  • Balsamic vinegar
  • Black pepper

Preparation

  1. Grill the Cajun mini fillets until chargrilled.

  2. Roast the aubergine with garlic and sea salt.

  3. Prepare the roasted vegetable couscous according to package instructions.

  4. Chop the avocado, tomatoes, green pepper, cucumber, and red onion.

  5. Assemble all ingredients in a large bowl.

  6. Drizzle with avocado and lemon oil, balsamic vinegar, and season with black pepper.

  7. Serve with wholegrain pitas and stuffed olives.
