Crunchy Slaw with Soba Noodles and Peanut Sesame Dressing
Ingredients
- 100g soba noodles
- 2 cups cabbage, shredded
- 4 carrots, peeled and julienned or shredded
- 1 bunch of green onions, finely sliced
- 2 Tbsp toasted coarsely chopped peanuts
- Handful of coriander, roughly chopped
- Drizzle of chilli oil
- Fresh lime
Peanut sesame dressing
- 1/2 cup peanut butter
- 3 Tbsp rice vinegar
- 3 Tbsp toasted sesame oil
- 3 Tbsp tamari sauce
- 2 Tbsp maple syrup
- 1 Tbsp finely grated fresh ginger
- 2 garlic cloves, minced
Preparation
Dressing
Whisk together the ingredients in a medium bowl until smooth.
If the dressing is too thick, add a little water to thin it to a pourable consistency.
Slaw
Cook the soba noodles according to package instructions, drain, and rinse with cold water before returning to the pot and setting aside.
Shred the cabbage and carrots.
Assembly
In a large serving bowl, combine the noodles, cabbage, carrots, and green onions.
Pour dressing over the vegetables and toss to coat.
Allow the mixture to sit for about 20 minutes before serving.
Top with toasted peanuts, coriander, a drizzle of chilli oil, and a squeeze of fresh lime.
