Easy Fancy Crackers and Cheese Board

Ingredients

  • 1.5 cups flour
  • 1 tbsp sugar
  • 3 tbsp olive oil
  • 1/2 cup cold water
  • 1/2 tbsp dried rosemary
  • A big pinch of sea salt
  • A pinch of course salt to top crackers
  • 1 tbsp nutritional yeast (optional)

Preparation

  1. In a large mixing bowl, add all ingredients (except course salt) and mix to form a dough.

  2. Transfer dough to a floured surface and knead until soft (about 5 minutes).

  3. Roll out dough to 1/4 inch thickness and poke entire surface with a fork to let any air escape while baking.

  4. Transfer rolled dough to a parchment lined baking sheet and cut to desired shapes. I use a pizza cutter to keep it simple.

  5. Sprinkle with course salt.

  6. Bake in a pre-heated oven at 400 degrees F for 15-17 minutes. The goal is to get the crackers lightly brown, crisp and completely free of moisture. Check frequently at end of cooking to prevent burning.

  7. Serve these crackers with your favourite vegan cheese. I recently tried their small batch Creamy Swiss, Sun Dried Tomato & Basil, and Garlic & Fine Herbs. I can’t recommend a favourite because they are all amazing.
