Ginger Black Bean Bowl with Sriracha Dressing
Ingredients
Creamy ginger sriracha sauce
- 2-3 tablespoons tahini
- 1/2 teaspoon ginger powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 2-3 teaspoons sriracha
- 2 teaspoons maple syrup
- Pinch of salt
- Pinch of white pepper
- Juice of half a lime
- 2-3 tablespoons water or more to adjust consistency
Bowl
- 2 teaspoons olive oil
- 1 shallot
- 3 cloves garlic
- 1 inch ginger
- 2 15-ounce cans black beans
- 2 cups spinach
- 2 teaspoons soy sauce or coconut aminos
- Pinch of white pepper
- Pinch of salt
- Cilantro for topping
Preparation
In a pan, warm up the oil and add the shallots, sauté until softened.
Add the garlic and ginger and sauté until fragrant.
Add the black beans and sauté for about 3-5 minutes, then add the spinach and soy sauce and allow the spinach to wilt.
To make the dressing, whisk all the sauce ingredients together until smooth and adjust the water based on preference.
Tips
Add water to the dressing slowly to avoid making it too thin.
