Herby Rainbow Slaw with Sesame Tofu

Ingredients

  • 1 red capsicum
  • 1 yellow capsicum
  • 3 kale leaves
  • 1/4 purple cabbage
  • 1 large carrot
  • Large handful of coriander
  • Large handful of mint
  • Large handful of basil
  • 300g firm tofu
  • 3 tbsp tapioca or corn flour
  • 1 tbsp sesame oil

Dressing

  • 1 tbsp soy sauce or tamari
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tbsp vegan aioli
  • 1 tsp grated ginger
  • 2 garlic cloves

Preparation

  1. In a large bowl add all of the salad ingredients and mix well.

  2. Coat the tofu in the tapioca or corn flour and place in a large pan over medium heat with the sesame oil. Cook for 2-3 minutes on each side until golden. Remove from heat and set aside.

  3. To make the dressing add all of the ingredients to a bowl and mix well. Massage the dressing through the salad. Serve with the tofu and extra herbs.
