Mac N Cheese

Ingredients

  • 1/2 butternut squash
  • 1/2 block silken tofu
  • 1/2 onion, chopped
  • nooch
  • almond milk
  • lemon
  • nutmeg
  • garlic & onion powder
  • smoked paprika
  • turmeric (for colour)
  • s&p

Preparation

  1. Peel, chip & roast the squash for 1 hour

  2. Boil a pan of water & start to cook your pasta

  3. Saute your onion until soft

  4. Place all ingredients in a blender and mix until smooth (i eyeballed the spices & milk, adjust to your desired flavour & consistency but you want it v thick as the pasta will still have some water on it)

  5. Mix the sauce through the pasta & serve! i had mine with some peas and cashew parmesan
