Mac N Cheese
Ingredients
- 1/2 butternut squash
- 1/2 block silken tofu
- 1/2 onion, chopped
- nooch
- almond milk
- lemon
- nutmeg
- garlic & onion powder
- smoked paprika
- turmeric (for colour)
- s&p
Preparation
Peel, chip & roast the squash for 1 hour
Boil a pan of water & start to cook your pasta
Saute your onion until soft
Place all ingredients in a blender and mix until smooth (i eyeballed the spices & milk, adjust to your desired flavour & consistency but you want it v thick as the pasta will still have some water on it)
Mix the sauce through the pasta & serve! i had mine with some peas and cashew parmesan
