Southwestern Black Bean Pasta

Ingredients

  • 1 large avocado
  • 2 tablespoons lime juice
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 clove garlic, peeled and chopped
  • 8-16 oz whole wheat rotini pasta
  • 15 ounces corn, drained
  • 15 ounces black beans, drained and rinsed
  • 1/2 cup red pepper, diced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup chopped red onion
  • a handful of chopped cilantro

Preparation

  1. Cook pasta according to package instructions

  2. Drain, rinse, and allow to cool

  3. Blend the avocado, lime juice, chili powder, smoked paprika, cumin, and garlic until smooth

  4. Add a tablespoon of water at a time to thin as necessary

  5. In a large mixing bowl toss all of the ingredients together until well mixed and sauce evenly coats everything

  6. It is easier to first mix the veggies, then mix in the pasta, and mix in the sauce last

  7. Even more cilantro at the end! Refrigerate for at least an hour but even more flavor will develop if you give it an overnight chill
