Black Bean Corn Burger

Ingredients

  • 2 minced garlic cloves and 1 minced jalapeño
  • 1 small chopped white onion
  • olive oil or veggie broth
  • 1-15oz can black beans
  • 1 cup corn kernels
  • 1 tbsp vegan Worcestershire sauce
  • 1 tbsp lime juice
  • 1/2 cup flour (I used whole-wheat but all-purpose or gluten-free will work)
  • 1/2 cup breadcrumbs
  • 1/2 tsp ground cumin
  • 1 tsp dried oregano
  • 3/4 tsp smoked paprika
  • 1/2 tbsp chili powder
  • 1 packed tbsp chopped cilantro

Preparation

  1. Sauté 1 small chopped white onion, 2 minced garlic cloves and 1 minced jalapeño in a little olive oil or veggie broth until translucent, about 10 minutes

  2. Rinse and drain 1-15oz can black beans and transfer to large bowl

  3. Roughly mash beans, leaving some whole

  4. Add to beans: sautéed onion mixture, 1 cup corn kernels, 1 tbsp vegan Worcestershire sauce, 1 tbsp lime juice, 1/2 cup flour (I used whole-wheat but all-purpose or gluten-free will work), 1/2 cup breadcrumbs, 1/2 tsp ground cumin, 1 tsp dried oregano, 3/4 tsp smoked paprika, 1/2 tbsp chili powder, 1 packed tbsp chopped cilantro

  5. Use hands to incorporate well

  6. Add salt to taste

  7. Use hand to form patties

  8. Bake at 375F about 25 minutes on lined sheet, flipping after 15 minutes

  9. Or pan fry in non-stick with a little oil

  10. Enjoy
