Masala Cauliflower Chickpea Curry
Ingredients
Spices
- 2 tbsp Garam Masala
- 1/2 tbsp ginger
- 1 tsp cumin
- 1/2 tsp turmeric
- 1/2 tsp cayenne (or less if you’re not a big spice gal)
- 1/2 tsp salt
- fresh cracked black pepper
Main
- olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 small cauliflower head (or 1/2 a large one)
- 1 can organic chickpeas, rinsed and drained
- 1 can organic tomato sauce
- 1/3 cup organic coconut milk (from the can)
- a splash of water if it needs to be watered down at all
Preparation
Heat olive oil in a pot over medium heat
Add chopped onion and minced garlic, sauté until softened
Stir in the spices and cook for 1-2 minutes until fragrant
Add cauliflower, chickpeas, tomato sauce, and coconut milk; stir to combine
Add a splash of water if needed to adjust consistency, then simmer until cauliflower is tender, about 15-20 minutes
Serve over white basmati rice or your choice of base
