Masala Cauliflower Chickpea Curry

Ingredients

Spices

  • 2 tbsp Garam Masala
  • 1/2 tbsp ginger
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne (or less if you’re not a big spice gal)
  • 1/2 tsp salt
  • fresh cracked black pepper

Main

  • olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 small cauliflower head (or 1/2 a large one)
  • 1 can organic chickpeas, rinsed and drained
  • 1 can organic tomato sauce
  • 1/3 cup organic coconut milk (from the can)
  • a splash of water if it needs to be watered down at all

Preparation

  1. Heat olive oil in a pot over medium heat

  2. Add chopped onion and minced garlic, sauté until softened

  3. Stir in the spices and cook for 1-2 minutes until fragrant

  4. Add cauliflower, chickpeas, tomato sauce, and coconut milk; stir to combine

  5. Add a splash of water if needed to adjust consistency, then simmer until cauliflower is tender, about 15-20 minutes

  6. Serve over white basmati rice or your choice of base
