Quick and Simple Pizza Sauce from Tomatoes

Ingredients

  • 2 tbsp oil
  • 1 medium onion, diced
  • 6 cloves garlic, finely chopped
  • 3/4 tsp - 1 tsp salt (adjust to taste)
  • 2 cans chopped tomatoes
  • 1 tsp oregano
  • 1.5 tsp basil
  • 1 tsp black pepper
  • 1 tsp sugar (optional)

Preparation

  1. Heat oil in a pan. Add the diced onions + garlic to the pan along with salt, cook for 5 - 8 minutes till soft and translucent.

  2. Add in the chopped tomatoes, herbs and pepper. Simmer gently for 10 mins until the sauce is thicker, richer and darker in colour. Have a taste and add sugar only if the tomatoes are very acidic.

  3. Blend the sauce using a handheld immersion blender or allow to cool and use a normal blender. Use as required, great on pizzas or you can use it as a sauce for meatballs/pasta. Any leftover sauce can be frozen and used at a later stage, defrost completely and mix well before using.
