Easy Sundried Tomato and Spinach Pasta with Gnocchi

Ingredients

  • 3 garlic cloves
  • 1 small onion or half a large onion
  • 2 tbsp tomato passata or sub for purée
  • 100g of sundried tomatoes
  • 2 handfuls of spinach
  • 1 tsp oregano
  • Ground black pepper
  • Cooked pasta/gnocchi

Preparation

  1. Add the garlic, onion, sundried tomatoes, passata, 1/2-1 handful of spinach, oregano and pepper to a food processor. Process until nearly smooth.

  2. To a pan (I used the one that the pasta had been cooking in), add the sauce, pasta/gnocchi and remaining spinach. Pop the pan on a low heat and mix together. Heat for a few minutes and stir occasionally. Then serve!

Tips

  1. I used Aldi’s gnocchi found by the pasta sauce.
