Easy Sundried Tomato and Spinach Pasta with Gnocchi
Ingredients
- 3 garlic cloves
- 1 small onion or half a large onion
- 2 tbsp tomato passata or sub for purée
- 100g of sundried tomatoes
- 2 handfuls of spinach
- 1 tsp oregano
- Ground black pepper
- Cooked pasta/gnocchi
Preparation
Add the garlic, onion, sundried tomatoes, passata, 1/2-1 handful of spinach, oregano and pepper to a food processor. Process until nearly smooth.
To a pan (I used the one that the pasta had been cooking in), add the sauce, pasta/gnocchi and remaining spinach. Pop the pan on a low heat and mix together. Heat for a few minutes and stir occasionally. Then serve!
Tips
I used Aldi’s gnocchi found by the pasta sauce.
