Red Curry Tempeh Bowl

Ingredients

  • 4 oz tempeh
  • 1/2 cup natural peanut butter (smooth)
  • 1/4 cup tamari
  • 1 tablespoon minced ginger
  • 2 tablespoons minced garlic
  • 1 teaspoon red curry paste
  • 1 tablespoon lime juice
  • 1/2 cup water

Preparation

  1. Heat tempeh on both sides for about 2 minutes over medium heat on a pan until lightly golden.

  2. Combine all ingredients in a bowl and whisk until smooth.

  3. Pour over the tempeh and let sauce absorb and slightly thicken.

  4. In a bowl, serve with greens, mushrooms, edamame, avocado, lime and rice.
