Roasted Veggie and Mozzarella Pasta

Ingredients

  • 1 medium courgette
  • 2 peppers
  • 2 carrots
  • 2 tomatoes
  • 2-4 cloves of garlic
  • Olive oil
  • Pasta
  • Mozzarella cheese
  • Black pepper
  • Herbs

Preparation

  1. Chop the vegetables into chunks and keep the garlic in the skin.

  2. Drizzle with olive oil and roast for 30-40 minutes at Gas 5 until soft.

  3. Meanwhile, cook some pasta.

  4. Blend half the roasted vegetables and squeeze the garlic out of the skin. Add black pepper and herbs.

  5. Mix the sauce with the pasta and add in some chunky pieces of vegetables for texture.

  6. While hot, add chunks of mozzarella cheese and stir through so it starts to melt.
