Ingredients

  • zucchini
  • kale
  • red onion
  • carrots
  • white beans
  • sweet potato
  • olive oil
  • garlic powder
  • pepper
  • half a kale and quinoa frozen mix
  • balsamic glaze
  • hummus
  • craisins
  • pita chips
  • croutons
  • feta

Preparation

  1. Saute the zucchini, kale, red onion, carrots, white beans, and sweet potato with olive oil, garlic powder, and pepper

  2. Incorporate half of the kale and quinoa frozen mix

  3. Add balsamic glaze on top

  4. Serve with hummus, craisins, pita chips, croutons, and feta
