Shroomdog Chorizo and Spinach One-Pan Pasta

Ingredients

  • 1 pack of shroomdog chorizo from Sainsbury’s
  • 1 onion
  • 2 peppers
  • 2 garlic cloves
  • 1 tsp chilli powder
  • 1/2 tsp chilli flakes
  • 1 tsp paprika
  • 1 veg stock cube
  • 1 tin kidney beans in chilli sauce
  • Plant milk
  • 400g tomato passata
  • 2 tbsp nutritional yeast (optional)
  • 4 handfuls of spinach (optional)
  • 350g pasta

Preparation

  1. Add the chorizo chunks to a large pan and cook according to the pack instructions. Tip the chorizo into a bowl and then put to one side.

  2. Add the onion and pepper to the pan and fry for five minutes.

  3. Add the garlic to the pan along with the spices and veg stock cube and mix in.

  4. Pour the kidney beans, pasta and tomato passata into the pan. Stir in.

  5. Grab the empty bean tin and fill with water, pour this into the pan. Do this two more times.

  6. Using the same tin, fill with plant milk and stir in. Place a lid on top of the pan and leave to simmer on a medium to high heat for ten minutes.

  7. Stir the pasta, if the pasta is nearly cooked add the nutritional yeast and spinach. Stir in and leave until the spinach has wilted.
