Speedy Spaghetti Bolognese with Vegetables

Ingredients

  • 1 onion
  • 2 cloves garlic
  • 2 carrots
  • 150g chestnut mushrooms
  • 2 tins tomatoes
  • 1 tin green lentils
  • 2 tbsp tamari or soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp tomato puree
  • 1 tbsp oregano
  • 1 tbsp olive oil
  • 2 portions spaghetti

Preparation

Method

  1. Sauté the onion and garlic for five minutes until the onion is soft.

  2. Add the grated carrot and mushrooms to the pan and stir until the mushrooms brown.

  3. Add the tomatoes, lentils, tamari, maple syrup, tomato purée and oregano. Stir it altogether and simmer on a low heat, stirring occasionally, for 10 minutes.

  4. In the meantime, cook the spaghetti according to the packet.

  5. Drain the pasta and top with the sauce, some rocket and lots of Violife Parmesan.

Tips

  1. Adapt this for babies by removing the maple syrup and tamari.

  2. Grate the carrots and dice the mushrooms; peel carrots if not organic, and dice mushrooms in a food processor or by hand.
