Vegan Bolognese Pasta with TVP and Lentils
Ingredients
- 1 cup tvp
- 1 cup veggie stock
- 1/2 can of lentils
- walnuts
- carrots
- onion
- garlic
- Red sauce (store bought or homemade)
- 1 tablespoon of tomato paste
- nooch
- thyme
- oregano
- pasta
Parmesan mixture
- cashews
- nooch
- onion powder
- garlic powder
- salt
Preparation
Rehydrate TVP in a bowl with boiling hot stock. Leave for 10 minutes.
Fry onion, carrot, and garlic until fragrant.
Add TVP and cook for another 5 minutes.
Add lentils, sauce, and seasonings along with about a cup of water. Stir well and let simmer for 20 minutes, stirring often.
Add cooked pasta.
Top with homemade parmesan made by roughly blending cashews, nooch, onion powder, garlic powder, and salt.
