Spicy Cauliflower Bites

Ingredients

  • 2 garlic cloves, minced
  • 1 onion, sliced
  • 1 large cauliflower, cut into florets
  • 1 cup crushed tomatoes (try for salt free)
  • 1 tsp cayenne pepper
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • Pinch of Himalayan Salt, to taste
  • Fresh parsley leaves, chopped, for garnish

Preparation

  1. Preheat oven to 400°F

  2. In an non-stick pan, sauté garlic and onion until flagrant, about 3 minutes (add little bit of water to prevent sticking)

  3. Add in cauliflower florets and mix to combine

  4. Add in crushed tomatoes, cayenne, turmeric, salt, pepper, and mix until cauliflower is coated

  5. Transfer from pan to baking tray and roast for 45 minutes until tender and golden

  6. Garnish with parsley and serve immediately
